Swordfish with Garlic butter and vegetables

INGREDIENTS

  • 4 swordfish steaks
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Lemon wedges for serving
  • Fresh vegetables:  broccoli, carrots and zucchini

RECIPE

  1. Pat dry the swordfish steaks with paper towels and season both sides with salt and pepper.
  2. In a large skillet over medium heat, melt the butter. Add minced garlic and cook until fragrant, about 1 minute. - Optional use Steve Costi's Garlic butter.
  3. Place the swordfish steaks in the skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Baste the steaks with the garlic butter while cooking.
  4. Once the swordfish is cooked, remove it from the skillet and set it aside. Keep warm.


Steam the vegetables 

  1. In a large pot fitted with a steamer basket, bring about 1 inch of water to a boil over medium-high heat.
  2. Add the broccoli florets, sliced carrots, and zucchini to the steamer basket. Season with salt and pepper.
  3. Cover the pot and steam the vegetables for about 5-7 minutes, or until they are tender but still crisp.
  4. Once the vegetables are cooked, remove them from the steamer basket and transfer to a serving dish. Drizzle with olive oil and toss gently to coat.
  5. Serve and enjoy your delicious swordfish with garlic butter and steamed vegetables!
