Cajun Butter Barramundi

INGREDIENTS

  • 4 barramundi fillets
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish
  • Lemon wedges for serving

RECIPE

  1. Pat the barramundi fillets dry with paper towels and season both sides with salt and pepper.
  2. Make the Cajun Butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the Cajun seasoning and lemon juice. Cook for another minute, stirring constantly, then remove from heat.
  3. Preheat a skillet over medium-high heat. Once hot, add a drizzle of olive oil to the skillet. Place the barramundi fillets in the skillet, skin side down. Cook for about 3-4 minutes on each side, or until the fish is cooked through and easily flakes with a fork.
  4.  Add the Cajun Butter: Once the barramundi is cooked, reduce the heat to low and pour the Cajun butter sauce over the fillets. Let the butter sauce warm through for a minute or two, spooning it over the fish to coat evenly.
  5. Transfer the barramundi fillets to serving plates. Spoon any remaining Cajun butter sauce over the top. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
