Ocean Trout Fillet with Maple Butter & Mash Potato

Ingredients

  • 4 ocean trout fillets 
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 tablespoons unsalted butter, softened
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 4 large potatoes, peeled and cut into chunks
  • 1/2 cup milk or cream
  • Chopped chives or parsley for garnish (optional)

RECIPE

1. Prepare the Mashed Potatoes:

  • Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt.
  • Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes and return them to the pot.
  • Add the butter and milk or cream to the pot with the potatoes.
  • Mash the potatoes using a potato masher or fork until smooth and creamy. Season with salt and pepper to taste. Keep warm.

2.  Prepare the Maple Butter:

  • In a small bowl, mix together the softened butter, maple syrup, Dijon mustard, lemon juice, salt, and pepper until well combined. Set aside.

3. Cook the Ocean Trout:

  • Pat the ocean trout fillets dry with paper towels and season both sides with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Once the skillet is hot, add the trout fillets, skin side down, and cook for about 3-4 minutes, or until the skin is crispy and golden.
  • Carefully flip the fillets and cook for an additional 2-3 minutes, or until the fish is cooked through and flakes easily with a fork.

4. Serve and enjoy your Ocean Trout Fillet with Maple Butter and creamy mashed potatoes for a delightful and satisfying meal!
